Tomatoes are one of the top ten cancer fighting foods which will do you the world of good and slowly you might begin to think how good they are for your body versus the rubbish that is being stuffed down your throat and your mental approach might start to change slightly.
In fact the tomato is normally listed first on the cancer fighting super food list, making it probably the most powerful. This is great because there is so much you can do with tomatoes. There are many other cancer fighting super foods, but not always as appealing so if you like tomatoes you are at a great advantage.
Introducing tomatoes to kids at a young age is a good idea as well and to plant a couple in your garden or containers which will get them even more interested.

Tomato, Feta and Basil Soup
This is one of the easiest and most fantastic soups. This recipe is just an example that creates a lot of goodness, containing great cancer fighting foods. When I was cooking for a big mission organization I cooked it all the time and it was a winner. This was amazing considering people came from all over the world and some had not seen basil in their lives before.
There are hardly any ingredients that you need, but like the saying less is more definitely applies here. A tin of tomatoes, a couple of spoons of feta, which is probably the cheapest cheese and basil out the garden making it one of the cheapest soups out. The feta melts and the flavors combine with the tomato. There you have it..simplicity!
The nice thing about this recipe is that it can also be turned into a sauce and left for a variety of pasta dishes. For the sauce I would leave the cream out, but that’s completely up to you. but really great in this soup the way it melts and flavors combine with the tomato
Here’s is what you will need
- Olive oil
- 3 cloves garlic, finely chopped
- 2 x 400g/14 oz. tins whole peeled tomatoes
- 1 Tbsp sugar to taste
- 2 litres /4 pints vegetable stock
- 100ml /4 oz. cream
- 4 Tbsp feta, crumbled
- Handful Basil (basil is one of nature's cancer fighting foods, protecting cell structure.)
- Salt and pepper
- Add some olive oil to a pan and add the garlic
- When the garlic is toasted add the tomatoes and crush them up a bit, then add the sugar
- Take the pot off the heat and liquidize until smooth
- At this point you can reserve it for a sauce or carry on with the rest of the recipe for the soup
- Add the vegetable stock
- Add the cream
- Then add the feta and basil. It’s easy just to tear up the basil in the soup just like the Italians! You can also chop it fine and then throw it in if you prefer. Sometimes I make a little pesto with pestle and mortar and drizzle that over, which is quite nice.
- Don’t forget to add the salt and pepper
